Meal Prep time around 1.5 hours
A deliciously flavoursome, slightly hot spicey, meal. You will need two hob rings and a couple of large saucepans.
Start cooking the kale just before beginning with the red lentil stew preparation.
Misir Wat (Red Lentil Stew)
Ingredients:
- 3 tablespoons oil
- 1 large onion chopped
- 2 tablespoons fresh ginger, grated
- 2 cloves garlic, minced
- 2 tsp salt
- ground black pepper
- 1 Tbs hot smoked paprika
- 1 tsp tumeric
- 1 tsp garam masala
- 2 Tbs tomato paste
- 2 cups red lentils
- 6 cups water
- optionally, a couple of Tbs of vegan mayo per serving
Method:
- Place a large sauce pot over medium heat. Add the butter and chopped onions and saute for 3-5 minutes, until soft. Add the ginger and garlic and saute another 2 minutes.
- Next add the spices and tomato paste along with 2 teaspoons of salt. Mix well, then add the lentils and 6 cups of water.
- Cover the pot and bring to a boil. Once boiling, lower the heat and simmer for 20 minutes.
- Uncover and stir the lentils, then continue to cook uncovered for another 10-15 minutes until a thick porridge-like consistency is reached. Remove from heat and cover until ready to serve.
Berbere Paste or Spice Blend: If you happen to have Berbere paste on hand, you can use 3 1/2 tablespoons in place of the paprika, turmeric, garam masala, and tomato paste. If you have Berbere Spice Blend, do not omit the tomato paste, but swap 5 teaspoons for the paprika, turmeric, garam masala.
Gomen (Stir Fry Kale)
Ingredients:
- 3 bunch Kale (around 250g), Chopped
- 2 large shallots, thinly sliced
- 3 Tbs olive oil
- 3 large garlic cloves, thinly sliced
- 1 medium Jalapeno, sliced
- salt to taste (around 2 tsp)
Method:
- Add the chopped kale to a large pan, and cover with water.
- Boil on medium-high heat for about 40 minutes. Once simmering, start on the red lentils.
- Atter 40 minutes, strain and set aside for now.
- Heat the oil in a large pan over low heat. Add the onions to the pan. Cook for about 3 minutes.
- Add the garlic, and cook for about more 2 minutes.
- Stir in the cooked kale and stir-fry for about 10 – 15 minutes
- Add jalapenos and stir. Cook 2 more minutes, and then season with salt.
- Optionally sprinkle a teaspoon of ground korerima (black cardamom) to add authentic flavour.
