peach cobbler

Peach Cobbler

Ingredients:

  • 500 g (3.5 cups) peaches or nectarines (around 4-5)
  • 100 g (½ cup) Sugar
  • 80 g coconut oil or margarine
  • Pinch Salt

Batter

  • 170 g (1 cup) Flour
  • 150 g (2/3 cup) Sugar
  • 150 g (3/4 cup) Plant Milk
  • 2 teaspoons Baking Powder
  • 2 1/2 teaspoons Vanilla extract
  • Cinnamon (ground)
  • 1 lemon zest (optional, depending on your peaches)
  • Pinch Salt

Instructions:

  1. Wash thoroughly and slice the peaches / nectarines. Add them with sugar and a pinch of salt to a pan, stir to combine. Cook on medium heat for just a bunch of minutes (3-5), until the sugar is dissolved and the fruit has release juices. Set aside.
  2. Place coconut oil / margarine in a 15x25cm oven dish and smoosh it around the base till partially melted and lumpy.
  3. Prepare the batter by combining the flour, sugar, vanilla, lemon zest, baking powder and salt. Stir in the plant milk, just until combined.
  4. Pour the mixture into the dish, over the smooshed coconut oil and smooth it into an even layer.
  5. Add the peaches/nectarines with their syrup, sprinkle with cinnamon to taste and bake at 180 C, for 30-35 minutes.
  6. Serve preferably warm with dairy free vanilla ice cream and vegan caramel sauce if you fancy.
