Collating some of my favourite recipes

Serves 2

A tasty comfort food that’s become a new wintery favourite.

Ingredients:

  • 125g (half packet) fake (vegan) chicken, sliced into strips.
  • Oil for frying
  • 1 cup frozen peas and sweetcorn
  • 100g potato flakes (or 500g agria potatoes if fresh, diced, boiled, and mashed)
  • 1 3/4 cups boiling water
  • 1/4 cup oat milk
  • 4 Tbs Olive Oil, or margerine
  • Salt & Pepper
  • a claw pinch of yeast flakes.
  • 1 1/2 Tbs gravy powder
  • 1 cup boiling water

Method:

(If using real potatoes, wash, boil, and prepare to mash first with the oil, butter, S&P, and then set aside.)

  1. Boil a kettle with around 1 litre of water.
  2. Preheat a large frypan with a good glug of oil, and fry the fake chicken strips, in a medium/hot pan, until golden, turning frequently (around 5-8 minutes)
  3. Then add the frozen peas and sweetcorn to the hot pan, stir, and remove it from the heat.
  4. Add the gravy powder to a smaller seperate saucepan, add the 1 cup of boiling water and whisk throughly so as to avoid lumps. Simmer on a medium heat, stiring/whisking almost constantly for about 4 minutes until the gravy thickens.
  5. Meanwhile add 100g of potato flakes to a large mixing bowl. And then pour on the 2 cups of hot liquids, plus the Salt & Pepper and yeast flakes, and whisk / mix quickly with a fork until fully mixed through.
  6. Ensure both the gravy and the fake chicken, peas & sweetcorn are hot (possibly return to the heat for a couple of minutes, whilst plating up the mash).
  7. Plate up the mashed potato into two portions, add the fried chicken, peas & sweetcorn on top, and then drizzle all over with the hot gravy.
  8. Serve and eat immediately.
