This is a friend’s recipe. The flavour and texture profile isn’t quite right for me personally yet, but they like it, so making a note here for now.
Ingredients:
- 5 button mushroom, sliced
- one yellow onion, diced
- 2-3 stalks of celery, diced
- 1 carrot, diced
- 4-5 garlic cloves, minced
- salt and pepper and oil
- 2 Tbsp tomato paste
- a stock cube
- 1 heaped Tbsp cocoa powder
- 1 heaped Tbsp smoked paprika
- 1 Tbsp ground cumin
- 1 Tbsp ground coriander
- 1 tsp of popcorn seasoning
- good couple glugs of tamari sauce
- 1 heaped tsp vegemite
- 1 heaped Tbsp red miso paste
- one tin of campfire beans
- one tin of black beans, drained
- two tinfuls of water
- 1 cup of rice
- juice of half a lime
Method:
- Heat oil in pan
- Sauté the mushrooms till they start to colour. Add more oil and salt and pepper
- Add mirepoix and sauté till translucent
- Add garlic till fond appears
- Add all dry spices to add to fond and stir
- Add tomato paste, tamari, vegemite, and miso and stir to release fond
- Add beans and bean water, stir to further release fond
- Add rice and lower heat a little. Cook with lid on, stirring frequently to prevent rice from sticking to bottom of pan
- Add lime juice and serve with fresh salsa and guacamole
