Avocado and hash-browns, on top of toasted sour dough bread

Avo & Hash-browns

A very rich and delicious comfort food, with some great constrasting heat, flavours and textures.

My slight spin on smashed avocado on home-made sour dough.

Ingredients (per person):

  • 2 hash browns (cooked from frozen)
  • 2 slices of the brick loaf sour dough bread, lightly toasted.
  • margarine
  • 1/4 large fresh avocado, peeled and finely sliced.
  • balsamic glaze
  • garlic salt
  • salt
  • pepper

Method:

  1. Air-fry the hash browns, for around 12 minutes at 190 degrees C
  2. Cut two slices of bread from the brick loaf, and set aside.
  3. Peel and finely slice the fresh avocado.
  4. Add the sliced sour dough to the oven for a further 3-5 minutes, along with the hash-browns (totalling around 15 minutes for the potato)
  5. Remove the sour dough slices from the oven, spread with margarine, top with the fresh avocado and smoosh a little with a knife or fork.
  6. Drizzle a little balsamic glaze onto the avo.
  7. Sprinkle a little garlic salt on top of the avo too.
  8. Then place the hot hash-brown onto each slice
  9. Grind a little more fresh salt & pepper on top of the hash-browns
  10. Slice each stack slice in half, and serve immediately.
