Collating some of my favourite recipes

Serves 5-6

A further updated version of the semi-original version (posted 2018), and also the updated 2023 edition.

Ingredients:

For the frypan:

  • Olive oil for frying
  • 1 brown onion, peeled, halved, and very finely sliced
  • 250g pack of fake chicken (fricken), defrosted and hand shredded
  • 4 cloves garlic, peeled and finely chopped / crushed.
  • more oil for more frying (olive oil / toasted sesame oil)

For the rice cooker:

  • 2 cups (480ml) basmati rice
  • 2 1/3 cups water
  • 2/3 cup frozen peas and sweetcorn
  • 1 can black beans, drained
  • A splash of Avocado or EVO oil.
  • Salt & pepper
  • 2 Tbs pine nuts

For final serving (per portion):

  • Fresh Avocado (~1/3 per portion)
  • 2 Tbs sweet-chilli sauce
  • 1 heaped Tbs vegan mayonaise
  • dash soy / tamari sauce

Method:

  1. Peel and very finely slice a regular onion. Slow fry to begin caramalising for about ~30 minutes if you can.
  2. Meanwhile wash and set the rice to cook in a rice cooker with the water. But set a countdown alarm timer for 8 minutes.
  3. After the 8 minute timer, add the frozen peas & sweetcorn, and drained black beans, to the top of the still cooking rice. Do not stir through. Continue allowing that to finish cooking by itself.
  4. Once the rice cooker switches to ‘keep warm’, add the good drizzle of avocado oil, salt and pepper, and stir through, leaving it all in the ‘keep warm’ setting as your focus returns to the fry pan.
  5. Once the onion is browning and caramalising, add the shredded fricken (fake chicken) and the fresh garlic, stir occassionally and fry for 3-5 minutes until the fricken starts to brown.
  6. Transfer this fricken/onion/garlic into the rice cooker, add the pine nuts, and mix through throughly within the rice cooker.
  7. Extract however many of the 5-6 portions for serving now, and briefly stir fry in the medium to hot pan (with extra olive or toasted sesame oil).
  8. Serve with the chopped avocado, a drizzle of sweet chilli oil, a dash of tamari / soy sauce, and the vegan mayonaisse (all as preferred). Quck stir through roughly, and eat!
