Breakfast cookies

Breakfast Cookies

Makes 10 cookies.

Personally I don’t find these great yet, but they sort of make sense.

Ingredients:

  • 2 cups rolled oats, lightly blitzed in a food processor
  • 2-3 ripe bananas, mashed
  • 3 Tbs chia seeds
  • 1 tsp ground cinamon
  • 1/8 tsp salt
  • 10 tsp jam
  • 10 tsp peanut butter, to serve

Method:

  1. Mash up 2-3 ripe bananas in a large bowl.
  2. Lightly blitz the oats in a food processor, until broken down to slightly smaller pieces (not all the way to flour), and add to the mashed bananas
  3. Add the chia seeds, cinamon, and salt, and then mix well
  4. Make into 10 balls (it’ll be very wet and sticky), roughtly golf-ball sized, and evenly place on baking parchment (they don’t expand, so can be placed close together).
  5. Press down in the middle of each round, to make a small well, and add a tsp of your favourite jam to each.
  6. Bake for around 12 minutes, at 180 degrees C.
  7. Transfer to a cooling rack for about 10 minutes. Then top each cookie with a tsp of peanut butter.
  8. Can be stored in an airtight container for a few days.
