Collating some of my favourite recipes

Serves 1

Ingredients:

  • 2/3 cup rolled oats
  • 4/3 cups water
  • a little salt
  • 1/2 tsp ground cinamon

To serve

  • 1-2 Tbs brown sugar
  • a big splash oat milk

Other extras:

  • 1/2 bananas, sliced
  • sultanas
  • fresh / frozen blueberries
  • nuts
  • seeds
  • other dried fruits
  • yoghurt
  • fruit compote

Method:

Slow simmer for as long as possible, mixing as much as possible.

  1. Add the first set of ingredients to a small pan
  2. Bring to a gentle boil and then immediately down to a gentle simmer, stiring almost constantly (such as with a spurtle) for at least 5 minutes.
  3. The slower you heat it and mix it, the smoother and creamer the texture.
  4. Transfer to a large enough bowl, sprinkle liberally with the brown sugar and let that melt a bit, and then add a splash of cold oat milk immediately before eating.

Notes:

  • You can also prepare this slowly in advance in a rice cooker set to ‘warm’. Mixing frequently with a small wooden spoon, spatula, or spurtle.
