Serves 1
Ingredients:
- 2/3 cup rolled oats
- 4/3 cups water
- a little salt
- 1/2 tsp ground cinamon
To serve
- 1-2 Tbs brown sugar
- a big splash oat milk
Other extras:
- 1/2 bananas, sliced
- sultanas
- fresh / frozen blueberries
- nuts
- seeds
- other dried fruits
- yoghurt
- fruit compote
Method:
Slow simmer for as long as possible, mixing as much as possible.
- Add the first set of ingredients to a small pan
- Bring to a gentle boil and then immediately down to a gentle simmer, stiring almost constantly (such as with a spurtle) for at least 5 minutes.
- The slower you heat it and mix it, the smoother and creamer the texture.
- Transfer to a large enough bowl, sprinkle liberally with the brown sugar and let that melt a bit, and then add a splash of cold oat milk immediately before eating.
Notes:
- You can also prepare this slowly in advance in a rice cooker set to ‘warm’. Mixing frequently with a small wooden spoon, spatula, or spurtle.
