Beans and Rice, served here with avocado and a salsa

Beans and Rice

This is a friend’s recipe. The flavour and texture profile isn’t quite right for me personally yet, but they like it, so making a note here for now.

Ingredients:

  • 5 button mushroom, sliced
  • one yellow onion, diced
  • 2-3 stalks of celery, diced
  • 1 carrot, diced
  • 4-5 garlic cloves, minced
  • salt and pepper and oil
  • 2 Tbsp tomato paste
  • a stock cube
  • 1 heaped Tbsp cocoa powder
  • 1 heaped Tbsp smoked paprika
  • 1 Tbsp ground cumin
  • 1 Tbsp ground coriander
  • 1 tsp of popcorn seasoning
  • good couple glugs of tamari sauce
  • 1 heaped tsp vegemite
  • 1 heaped Tbsp red miso paste
  • one tin of campfire beans
  • one tin of black beans, drained
  • two tinfuls of water
  • 1 cup of rice
  • juice of half a lime

Method:

  1. Heat oil in pan
  2. Sauté the mushrooms till they start to colour. Add more oil and salt and pepper
  3. Add mirepoix and sauté till translucent
  4. Add garlic till fond appears
  5. Add all dry spices to add to fond and stir
  6. Add tomato paste, tamari, vegemite, and miso and stir to release fond
  7. Add beans and bean water, stir to further release fond
  8. Add rice and lower heat a little. Cook with lid on, stirring frequently to prevent rice from sticking to bottom of pan
  9. Add lime juice and serve with fresh salsa and guacamole
