Pumpkin Kibbee (Kibbe’t el Jlant)

Shared to me back in 2010 by a friend. It’s a recipe their grandmother from Lebanon used to make.

Ingredients:

  • 1/4 cup dried chick peas
  • 2 cups chopped pumpkin
  • 2 cups chopped potatoes
  • 1 cup burghul
  • 1 onion (chopped finely)
  • fresh mint,
  • fresh parsley,
  • fresh coriander,
  • salt (2 tsp),
  • black pepper (1/2 tsp),
  • all-spice (1/2 tsp)
  • 1 1/4 cups plain flour (sifted)
  • 1/2 cup olive oil

Method:

  1. Wash chick peas, cover with water and soak overnight.
    Drain the next day.
  2. Boil pumpkin and potato until soft. Drain and mash.
  3. Add chick peas, burghul, onion, salt and spices and mix.
  4. Add flour and mix again.
  5. Make round patties and cook in heated oil in bottom of pan until golden
    brown.
