Shared to me back in 2010 by a friend. It’s a recipe their grandmother from Lebanon used to make.
Ingredients:
- 1/4 cup dried chick peas
- 2 cups chopped pumpkin
- 2 cups chopped potatoes
- 1 cup burghul
- 1 onion (chopped finely)
- fresh mint,
- fresh parsley,
- fresh coriander,
- salt (2 tsp),
- black pepper (1/2 tsp),
- all-spice (1/2 tsp)
- 1 1/4 cups plain flour (sifted)
- 1/2 cup olive oil
Method:
- Wash chick peas, cover with water and soak overnight.
Drain the next day. - Boil pumpkin and potato until soft. Drain and mash.
- Add chick peas, burghul, onion, salt and spices and mix.
- Add flour and mix again.
- Make round patties and cook in heated oil in bottom of pan until golden
brown. - Bon appetit!
