Hummus (& Tahini)

Tahini

Ingredients:

  • 1/2 cup hulled sesame seeds
  • 1-2 Tbsp plain oil (ie rice bran)
  • 1 pinch salt

Method:

  1. Add sesame seeds to dry saucepan, over medium-low heat.
  2. Stirring constantly until fragrant and very lightly coloured.
  3. Transfer seeds to baking paper on a wire rack, and cool completely
  4. Add seeds to food processor, and process until a crumbly paste
  5. Add oil & salt, and process for 2-3 more minutes, until smooth and pourable.

Main Hummus

Ingredients:

  • 1 can Chickpeas, de-skinned
  • 1/4 cup Tahini (as above)
  • 1/4 cup fresh Lemon juice
  • 1 clove Garlic, minced
  • 2 Tbsp Extra Virgin Olive Oil
  • 1/2 tsp ground Cumin
  • 1 pinch salt
  • 2-3 Tbsp Aquafaba (canned chickpea water)
  • sprinkle of Paprika / Cayenne Pepper / Sumac to serve

Method:

  1. Lightly brown the garlic in some oil over medium heat
  2. Combine tahini & lemon juice in blender / food processor, for 1 minute
  3. Scape side and bottom, and process for 30 more seconds
  4. Add oil, garlic, cumin, salt. Process for 30 seconds
  5. Scrape and process for another 30 seconds
  6. Add half the drained canned chickpeas, process for 1 minute
  7. Scrape & add the rest of the chickpeas
  8. Process until thick & smooth
  9. Add aquafaba, process until perfect consistency
  10. Adjust salt as needed,
  11. Serve with drizzle of oil, and your preferred sprinkle.

Notes:

  • You can add the discarded chickpea skins into other recipes like oat cookies.
