A surprisingly tasty vegan oat cookie, with a good texture, and sweet honey like taste.
Makes 12 cookies
Ingredients:
- 1 tablespoon ground chia seed + 3 tablespoons water
- 1 teaspoon vanilla extract
- 110g (1/2 cup) coconut oil, softened
- 80g brown sugar
- 85g white sugar
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cups oats
- 90g finely chopped dates
- 1 to 2 Tbs coconut yoghurt
Instructions:
- Preheat oven to 180˚C and line a baking sheet with parchment paper.
- In a small bowl, mix the ground chia and water together. Set aside.
- With a mixer, cream the coconut oil with the two sugars, until fluffy,
- In a medium bowl, whisk the flour, baking soda, cinnamon, and salt together.
- Add the vanilla and the chia mixture to the bowl, and mix until incorporated.
- Slowly add the flour mixture to the bowl, mixing until each addition has been incorporated, scraping the sides as needed.
- Mix in oats and dates until evenly distributed in the dough.
- Add 1 to 2 tablespoons of yoghurt, to help bind the mix together as needed.
- Divide into 12 cookies on a baking sheet, and bake for 12-15 minutes.
- Allow to cool for a few minutes on the baking sheet, before transferring to a cooling rack.
