Oat Cookies

Oat Cookies

A surprisingly tasty vegan oat cookie, with a good texture, and sweet honey like taste.

Makes 12 cookies

Ingredients:

  • 1 tablespoon ground chia seed + 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 110g (1/2 cup) coconut oil, softened
  • 80g brown sugar
  • 85g white sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups oats
  • 90g finely chopped dates
  • 1 to 2 Tbs coconut yoghurt

Instructions:

  1. Preheat oven to 180˚C and line a baking sheet with parchment paper.
  2. In a small bowl, mix the ground chia and water together. Set aside.
  3. With a mixer, cream the coconut oil with the two sugars, until fluffy,
  4. In a medium bowl, whisk the flour, baking soda, cinnamon, and salt together.
  5. Add the vanilla and the chia mixture to the bowl, and mix until incorporated.
  6. Slowly add the flour mixture to the bowl, mixing until each addition has been incorporated, scraping the sides as needed.
  7. Mix in oats and dates until evenly distributed in the dough.
  8. Add 1 to 2 tablespoons of yoghurt, to help bind the mix together as needed.
  9. Divide into 12 cookies on a baking sheet, and bake for 12-15 minutes.
  10. Allow to cool for a few minutes on the baking sheet, before transferring to a cooling rack.
