Makes 10 cookies.
Personally I don’t find these great yet, but they sort of make sense.
Ingredients:
- 2 cups rolled oats, lightly blitzed in a food processor
- 2-3 ripe bananas, mashed
- 3 Tbs chia seeds
- 1 tsp ground cinamon
- 1/8 tsp salt
- 10 tsp jam
- 10 tsp peanut butter, to serve
Method:
- Mash up 2-3 ripe bananas in a large bowl.
- Lightly blitz the oats in a food processor, until broken down to slightly smaller pieces (not all the way to flour), and add to the mashed bananas
- Add the chia seeds, cinamon, and salt, and then mix well
- Make into 10 balls (it’ll be very wet and sticky), roughtly golf-ball sized, and evenly place on baking parchment (they don’t expand, so can be placed close together).
- Press down in the middle of each round, to make a small well, and add a tsp of your favourite jam to each.
- Bake for around 12 minutes, at 180 degrees C.
- Transfer to a cooling rack for about 10 minutes. Then top each cookie with a tsp of peanut butter.
- Can be stored in an airtight container for a few days.
