You can also use this mix for any of other ground beef style recipes, like spag bol. One ball per person portion.
Makes 6 patties
Ingredients
For burger patties
- 1/2 cup soaked cashews
- 1 cup cooked white rice (1/2 cup uncooked) or 1 cup cooked brown lentils
- 2 cups sliced mushrooms (~250g)
- 1 Tbsp olive oil
- 1 – 2 Tbsp aquafaba
- 1/2 tin drained chickpeas
- 1 small grated beetroot, or about 10 slices of tinned beetroot.
- 1/4 cup quick-cooking oats
- 1/2 tsp balsamic vinegar
- 1/2 tsp liquid smoke
- 1 tsp tomato pulp
- 1 tsp apple sauce
- 1 -2 tsp miso paste
- 1/4 tsp yellow mustard
- 1/2 tsp vegemite
- 1 cube vegetable bouillon, or about 1 heaped tsp
- 1 Tbsp nutritional yeast
- 1 tsp cocoa powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cajun spice seasoning
- 1/4 tsp MSG
- 1/4 tsp volcanic salt
For serving (choices of, to taste)
- Burger buns, toasted if desired
- vegan mayo
- Caramelised red onion
- Spinach leaves
- Vegan cheese
- Sliced gherkins
- Sliced tomato
- sliced avocado
- sliced (tinned) beetroot
- finely sliced mushroom
- Ketchup
- Yellow mustard
- Hot sauce
- Hot chips (around 200g per person)
Method:
- Cook the rice and soak the cashews (ideally overnight, or 30 minutes in boiling water)
- Fry the sliced mushrooms in oil, stirring occasionally, until the mushrooms have caramelised well (around 10 to 13 minutes). Add a little salt and pepper towards the end of the cooking.
- Add the mushrooms to a food processor, or pulsed in a commercial blender, with the rice, drained cashews, and rest of the pattie ingredients. Process until completely ground with mostly small pieces (I personally prefer a finer processed mix, but you might prefer it more chunky)
- Form the mix into six balls and form each of those balls into a patty. Place them on parchment paper.
- Air-fry for about 15-18 minutes at 180 degrees C (along with your chips).
- Add sliced vegan cheese on top of each patty, and add your sliced buns to the side of the baking tray, to cook for a few more minutes in the air-frier.
- Remove the patties from the oven and serve on the buns with leaves, mayo, sliced veg and any other preferred toppings, along with a side of chips (around 200g per person)
Storage
- After diving the mix into 6 balls, simply freeze what’s left, next to each other in a suitable container. After freezing, break the balls off the group for what you need, and then defrost in the fridge overnight before shaping them into the patties to air-fry the next day.
