Makes 6 large muffins.
Ingredients:
- 2/3 cup mashed banana (1 large banana)
- 1/2 cup non-dairy milk
- 1/6 cup (40ml) canola oil
- 1/2 cup granulated sugar
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon vanilla extract
- 1 1/8 cups all purpose flour
- 1/2 Tablespoon baking powder
- 1/3 teaspoon salt
- 1/6 cup chopped walnuts, nibble size
- 1/6 cup chocolate chunks, half ‘squares’
Method:
- Preheat oven to 205 degrees C.
- Mostly mush up the banana, leaving a few big chunks (don’t completely purēe it)
- Add the milk, oil, and sugar, vinegar, and vanilla, and mix well with a spatula
- Add the flour, salt and baking powder, and barely combine the ingredients (don’t overmix, but dig deep to reach through it all).
- Finally add the hazlenuts and chocolate chunks, and fold into the main ingredients.
- Transfer two heaped dessert spoons of mix, to each lined section of the muffin tray.
- Bake for around 22 minutes.
- Remove from the oven, take out of the muffin tray, but keep the wrapper on for about 5 more minutes.
- Finally peel of the wrapper (as preferred), and allow to cool more fully.
